Brut Spécial is another non-vintage cuvée from Alexandre Filaine, the boutique Champagne label built by Fabrice Gass, a former longtime Bollinger winemaker, on just over a hectare of vines spread across ten plots in Damery, in the Vallée de la Marne. The estate's plantings favour Pinot Noir alongside Chardonnay and Pinot Meunier, and Gass vinifies in a traditional manner, using old enamelled steel tanks for settling and old barrels for native-yeast fermentation, generally without malolactic conversion due to his fruit's naturally high acidity. It is a structured, vinous Champagne, with orchard fruit, a touch of brioche, and firm, chalky minerality rather than an overtly fruity profile. Pair with grilled fish, roast chicken, or a rich cheese course.
