La Chablisienne is the leading cooperative of Chablis, founded in 1923 and today supplying more than a quarter of the appellation's total production from over 250 grower-members farming roughly 1,250 hectares, including a share of Chablis Grand Cru and Premier Cru vineyards. Mont de Milieu, one of the appellation's warmer, easternmost premier cru climats, produces a riper, rounder style of Chardonnay than some of Chablis's more austere sites. The 2018 vintage from La Chablisienne shows ripe citrus and orchard fruit, a gentle honeyed note and the underlying chalky, saline minerality that Kimmeridgian limestone soils give to Chablis. Made exclusively from Chardonnay, it is a well-balanced, food-friendly premier cru that pairs naturally with scallops, roast chicken or creamy fish dishes, and reflects the consistent quality for which the cooperative is known.
