Aux Bois is a named parcel farmed by Domaine des Marnes Blanches, the Fromonts' Sud-Revermont estate in the Côtes du Jura, planted to Savagnin. It is made ouillé, the barrel topped up during ageing to keep the wine fresh, so expect saline, nutty and citrus-peel notes rather than the sherry-like intensity of Vin Jaune. The marl soils around Cesancey and the neighbouring villages give a savoury finish. The vines are worked by hand, the rows ploughed. Serve with Comté aged eighteen months or more, or with roast chicken and mushrooms.
