En Jensillard is one of the single sites that Domaine des Marnes Blanches, the Sud-Revermont estate of Pauline and Géraud Fromont, vinifies separately across its marl and limestone parcels. Planted to Savagnin, it is made ouillé, the barrel topped up, rather than in the oxidative manner reserved for Vin Jaune, giving citrus, quince and a salty, almost iodine note. The vines are worked by hand, the rows ploughed. Serve with chicken in a cream and mushroom sauce, or with well-aged Comté.
