Lavaux Saint-Jacques is the largest premier cru of Gevrey-Chambertin, sitting at the mouth of the Combe de Lavaux and running up along the wall of Clos Saint-Jacques to around 325 metres; the breeze down the combe keeps it cool. Denis Mortet set up under his own name with four and a half hectares in the village, inherited from his father Charles, and enlarged the estate steadily before his death in 2006; his son Arnaud then took over and moved the style towards infusion. The domaine now farms around sixteen hectares across roughly a hundred parcels. The 2022 shows dense dark cherry and blackcurrant, warm spice and firm, well-knit tannins. Serve with roast game, venison or a mature farmhouse cheese.
