Les Molates is farmed by Domaine des Marnes Blanches for both Chardonnay and Savagnin, so the same Côtes du Jura parcel can be read through two grapes. This Savagnin is made ouillé, the barrel kept topped up, rather than in the oxidative manner used for Vin Jaune: citrus, green apple and the variety's saline, nutty edge. The vines grow on the marl that gives the domaine its name, near the Fromonts' Sud-Revermont base, and are worked by hand with the rows ploughed. Serve with Comté, a creamy chicken dish or freshwater fish.
