Saint-Romain is a lesser-known Côte de Beaune appellation tucked into a high valley behind Auxey-Duresses and Meursault, producing white Burgundy from cooler, higher-altitude vineyards, and Domaine Prunier-Damy, the 12-generation family estate now led by Justine Prunier, bottles this Sous le Château cuvée entirely from Chardonnay. The 2022 vintage, at 13% alcohol, shows bright citrus, green apple and a distinctly chalky, mineral finish, a hallmark of Saint-Romain's limestone soils and cooler mesoclimate compared to neighboring villages. The domaine uses environmentally considerate viticulture and ages its whites in a majority of older wooden casks to preserve freshness and let the terroir shine through. This white suits shellfish, goat cheese or a simple grilled sole.
