Pommard makes the firmest, most tannic reds of the Côte de Beaune, with darker fruit than neighbouring Volnay, and Bouchard Père & Fils, the Beaune house founded in 1731, draws this bottling from premier cru parcels within the appellation. It is made entirely from Pinot Noir. The 2019 shows dark cherry, blackcurrant and a firm, earthy structure at 13.5% alcohol, and will develop over five to ten years towards a more velvety texture, though it can also be opened now after decanting. It suits braised beef, lamb shoulder or aged Burgundian cheeses.
