Les Pézerolles is a premier cru vineyard in the northern part of Pommard, next to the Beaune boundary, where Domaine de Montille farms 0.89 hectares. At 13% alcohol, the 2020 shows dark cherry and plum fruit, fine-grained tannin and a savoury, mineral edge. The estate is based in Volnay, where Hubert de Montille took charge in 1947 and rebuilt a family holding that had fallen to about 2.5 hectares by the end of the Second World War; his son Etienne runs it today. The domaine works around 35 hectares across the Côte de Beaune and the Côte de Nuits, farmed organically since 1995 and biodynamically since 2005, certified by Ecocert. Pair with roast lamb, duck or a firm cheese, and allow the wine several years to unfold.
