Saint-Aubin is a Côte de Beaune village tucked between Chassagne-Montrachet and Puligny-Montrachet, and this Les Castets premier cru red comes from Domaine Lamy-Pillot, the Chassagne-Montrachet estate founded in 1973 by René Lamy and Thérèse Pillot. Made from Pinot Noir, the 2020 vintage, at 13.5% alcohol, shows bright red fruit, a mineral, stony edge from the village's limestone soils, and moderate tannin, making it approachable earlier than some of its Côte de Beaune neighbours. The domaine, now led by sons-in-law Sébastien Caillat and Daniel Cadot-Lamy, farms largely along organic lines. Pair with roast chicken, charcuterie or a soft cheese. A terroir-driven premier cru red from Saint-Aubin.
