Vin de Paille from Domaine des Marnes Blanches, the estate of Pauline and Géraud Fromont in the Sud-Revermont villages of the Côtes du Jura. This traditional sweet wine is made by drying the harvested grapes on straw for several weeks before pressing, which concentrates the sugars and aromas ahead of a long, slow fermentation. It shows honey, dried apricot and walnut, framed by the acidity that keeps Jura Vin de Paille from feeling heavy. It is bottled in the traditional 37.5 cl format. The vines are worked by hand, the rows ploughed. Serve in small glasses with a blue cheese such as Bleu de Gex, foie gras or a fruit tart.

Should this wine be decanted?

No: a straw wine gains nothing from aeration. Serve it well chilled instead, and pour an older bottle gently, as it may have thrown a fine sediment.

How long can this wine be cellared?

Vin de Paille is built to last, twenty years and more from a vintage like 2019: its concentrated sugar and Jura acidity are what preserve it (cellar at a stable 12-14 °C).

What food pairs well with this wine?

It pairs particularly well with: walnuts, aged Comté, dried apricots and figs, Bleu de Gex and other blue cheeses, and foie gras. Recommended serving temperature: 8-10 °C.
