Fourchaume is the largest of the Chablis premiers crus. It lies on the right bank of the Serein, on the same side as the grand cru hill and contiguous with it through its Vaulorent sub-climat. This bottling comes from Domaine Jean-Paul et Benoît Droin, a family estate in the town of Chablis that traces its winegrowing line to the early seventeenth century and that Benoît Droin has run since 1999. Made entirely from Chardonnay grown on Kimmeridgian limestone, the wine ferments partly in tank and partly in barrel, the two portions blended after eight to ten months, with only a small share of new oak. The 2021 came from a cool year in the region and shows citrus, green apple and a flinty, saline finish. Pair with oysters, grilled sole or a creamy goat cheese. Rows are ploughed or left grassed and treatments are kept low.
