Montmains lies on the left bank of the Serein, facing the grand cru hill across the valley, on Kimmeridgian marl and limestone. This bottling is made by Domaine Jean-Paul et Benoît Droin, a family estate in the town of Chablis that traces its winegrowing line to the early seventeenth century and that Benoît Droin has run since 1999. Pressing is pneumatic, and the Chardonnay ferments partly in stainless steel tank and partly in barrel, the two portions blended after eight to ten months, with new oak kept low. The 2023 shows lemon, white blossom and a delicate chalky minerality. Pair with fresh oysters, sushi or a simple grilled white fish. Rows are ploughed or left grassed and treatments are kept low.
