Montée de Tonnerre sits on the right bank of the Serein, its slope running alongside the grand cru hillside, on the same Kimmeridgian limestone. This cuvée is made by Domaine Jean-Paul et Benoît Droin, a family estate in the town of Chablis that traces its winegrowing line to the early seventeenth century and that Benoît Droin has run since 1999. Pressing is pneumatic, and the Chardonnay ferments partly in tank and partly in barrel, the two portions blended after eight to ten months, with new oak kept low. The 2023 shows citrus, white flowers and a pronounced flinty minerality. Serve with grilled turbot, oysters or a rich fish stew. Rows are ploughed or left grassed and treatments are kept low.
