Les Demoiselles is a Premier Cru of Puligny-Montrachet, made up of the southern plots of Le Cailleret, which lie just north of Le Montrachet and next to Chevalier-Montrachet. This bottling is made by Domaine Philippe Colin, a Chassagne-Montrachet estate created in 2004, when the vineyards of Domaine Michel Colin-Deléger were divided between Philippe Colin and his brother Bruno. Expect white flowers, citrus and a fine, saline minerality, with length on the finish. The whites are fermented in stainless steel and aged twelve to fifteen months in French oak, with 20 to 25 percent new wood. This is a wine for classic white Burgundy pairings: turbot, langoustine, or a delicate goat's cheese.
