Chevalier-Montrachet is a Grand Cru of the Côte de Beaune, in the commune of Puligny-Montrachet, on the slope directly above Le Montrachet. This bottling is made entirely from Chardonnay by Domaine Philippe Colin, a Chassagne-Montrachet estate created in 2004, when the vineyards of Domaine Michel Colin-Deléger were divided between Philippe Colin and his brother Bruno. From the 2021 vintage Philippe Colin handed a number of parcels to his son Simon, who bottles them under his own name. The wine is fermented in stainless steel and aged twelve to fifteen months in French oak, with 20 to 25 percent new wood. Serve with lobster, langoustine or a delicate cream-based veal dish.
