Chablis
Chablis is the northernmost appellation of Burgundy, producing Chardonnay on Kimmeridgian limestone and clay some 100 km from the Côte d'Or. The cool climate and the marine fossil-rich soils give wines that are tighter, more saline and more citrus-driven than Côte de Beaune whites, usually with little or no new oak.
This collection covers the full hierarchy — Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru — with Billaud-Simon among the domaines represented. Grand Cru and the better Premier Crus reward five to fifteen years in bottle; village Chablis is generally best in its first five years.
